An insight in our breakfast club.
Gérard's atelier is located in Haren, outside of Brussels. We spent 2 months renovating this space from scratch to make it completely new. It all started in a basement from Leuven and now we have a proper working space with advanced machinery: a lamination machine, a proofing room, good working ovens and a great mixer.

Meet our equipments:

Lamination machine
Traditionally croissants are laminated by covering 1/2 of the dough with butter, and then giving three half turns

Proofing room
The proofing room allows the dough to rise after it has been shaped and before it is baked.

Mixer
This industrial mixer is used to perfectly mix all the ingredients and incorporate them into a perfect dough.
