Indeed, this round bread baked on stone offers a range of complex flavors, transitioning from a mild bitterness in the crust due to its stone baking, to the full richness and softness of its crumb. The advantage of the green rye is that it adds a lot of tenderness and moisture to the dough, resulting in a beautifully uniform crumb.
Thanks to its long hours of fermentation, our spelt wheel is incredibly digestible and has a relatively low gluten content. The green rye adds a load of fibers and high-quality proteins, making this bread even more exceptional!
Its only problem?... We can't seem to stop eating it 😎.
